One of the oldest, most celebrated classic cocktails in existence, an Old Fashioned has a typical base of bourbon mixed with Angostura bitters and a sugar cube, garnished with a sliver of orange peel (plus a cocktail cherry in some cases). No, there’s nothing wrong with the original, but the base – like all classic cocktails – has been constantly tinkered with over the past 100 years – much to the dismay of many purists. Some bars favour rye or Scotch whisky, or a mixture of each; others substitute bourbon for rum or Cognac and embellish the other key components with complimentary (or often disparaging) flavours.

From the Dingle Distillery, set-up by the team behind The Porterhouse Brewing Company, Dingle Original Gin is an Irish Artisan spirit, distilled with plenty of foraged ingredients such as bog myrtle, heather, rowan berries and hawthorn. Teamed with cranberry juice, cinnamon syrup, cherry Heering and cranberry bitters, the Dingle Gin ‘Old Fashioned’ is a wintery, gin twist on the classic – a warming sweet cinnamon spiced cocktail simple enough to make at home this weekend.

Ingredients

25ml Dingle Original Gin

50ml cranberry juice

15ml cinnamon syrup

10ml cherry Heering

2 dashes cranberry bitters

Dried cranberries, a handful

Orange rind, zested

Method

Muddle the cranberries and orange rind with the cinnamon syrup in the base of a mixing glass.

Add ice and all other ingredients and stir well for 40-50 seconds.

Strain over fresh ice in a rocks glass.

Garnish with an orange lick, three dried cranberries and a cinnamon stick.

Serve immediately.
