Before we all start scrambling to the supermarkets to panic buy ingredients for pancake day (28th February), it’s worth noting that with so much focus on healthy living at present, it’s now easy to make healthier pancakes without compromising on flavour. Using mashed banana, eggs, wholemeal flour and fat-free Arla B.O.B milk – this week’s recipe makes it possible to suppress the over indulgence associated with pancake day, but without sacrificing on flavour.
Ingredients
Serves four
Whole wheat flour, 175g
Baking powder, 2tsp
Salt, a pinch
Eggs, 3, beaten
Arla B.O.B milk, 250ml
Bananas, 2, mashed
Blueberries, 200g
Honey, 1tbsp
Vanilla paste or extract, ½ tsp
Cooking spray (optional)
Method
Combine the flour and baking powder with a pinch of salt in a large bowl or jug.
Beat the eggs, Arla B.O.B milk and bananas together. Add to the dry ingredients and mix well.
Place the blueberries, honey and vanilla in a small pan and gently heat for 10 minutes until the texture resembles sauce.
Heat a little cooking spray in a large frying pan and spoon in a ladleful of the batter. Cook for 1-2 minutes on each side, flipping when little bubbles appear on the surface.
Keep warm while you finish the rest of the pancakes. Serve with the hot blueberry sauce.
