This month, award-winning mixologist Ryan Chetiyawardana has collaborated with Waitrose to create a selection of gin-based cocktail recipes. Best known as Mr Lyan, Ryan Chetiyawardana has garnered quite a reputation with his bars White Lyan and Dandelyan. Opened in 2013, in Hoxton, White Lyan was the first bar in the world to use no perishables (without fruit garnishes, or ice), serving a collection of mesmerising pre-batched cocktails. Most of those cocktails are available to buy outside of Mr Lyan’s bars, too.

Speaking on this week’s featured cocktail recipes, designed in collaboration with Waitrose, Mr Lyan said:

This drink is mentioned in the Dandelyan menu and it’s become a bit of a favourite among our guests. It’s snappy and dry – ideal when you want a summery aperitif. It’s a shaken drink so probably best for smaller gatherings, but it’s delicious and fresh. The garnish of a caper berry is a great savoury touch for serving pre-dinner.

Ingredients

40ml gin

20ml lemon juice

20ml Fino sherry

10ml sugar syrup

2 dashes Angostura Bitters

To Garnish

Caper berry

Lemon twist

Method

Shake all the ingredients hard, then double strain into a small, chilled cocktail glass.

Garnish with a caper berry and a lemon twist.
