Rubies in the Rubble Cheese Toastie

Inspired by a visit to New Covent Garden Market, noticing the huge quantities of perfectly edible fruit and vegetables wasted if not sold, Jenny Costa’s Rubies in the Rubble adheres to the belief that all good food should be cherished.

Food waste has become a hot topic, of late, with such increased social consciousness surrounding food consumption. A gourmet condiment brand with a prominent focus on sustainable food production, Rubies in the Rubble works directly with UK farmers to source fresh fruit and vegetables from surplus produce.

Every jar of Rubies products champions fresh produce and raises awareness about the need to value food. The ‘Pink Onion and Chilli’ relish, for instance, features eight salvaged Rosanna pink onions in each jar. These undersized or blemished pink onions can’t be machine peeled, though the energy used to grow these onions could power a light bulb for three hours.

Ingredients
  • Bread, 2 slices
  • Rubies in the Rubble Pink Onion and Chilli relish
  • Cheddar, to taste
  • Gruyère, to taste (optional)
  • Butter, a knob
Method
  1. Get a slice of your favourite bread (if in doubt, you can’t beat a good sourdough) and butter both sides.
  2. Add a layer of Rubies in the Rubble pink onion and chilli relish. Grate some cheddar on top (if you’re feeling fancy, use half cheddar, half gruyère).
  3. Then add the top slice of bread (again, with both sides buttered), and whack in a hot frying pan until the cheese is melted and the bread is golden. Flip to toast on the other side.
