The Weekly Cocktail Recipe – POND Dalston’s American Gothic

Created by Felix Cohen, owner and founder of The Manhattans Project – the team behind the much discussed Cocktails on offer at POND, a Hawaiian restaurant in a hidden location just a stones throw from Dalston’s hip centre, the American Gothic is this week’s featured recipe.

“Classic cocktails, done right” is the main mantra from the Manhattan Project and available for just three months, the American Gothic is a must try; comprising Rye Whiskey, Calvados, sugar syrup and Angostora Bitters, available for £9. That’s if you can manage to find the venue, of course.

Ingredients

25ml Rittenhouse 100 Rye Whiskey

25ml Calvados (Berneroy VSOP)

5ml sugar syrup

2 dashes Angostura Bitters

Apple wood (for smoking)

To Garnish

Method

1. Use a smoking gun to smoke it with apple wood, or leave with chunks of toasted apple wood overnight for a similar flavour.

2. Stir on ice in an old fashioned glass and garnish with apple fan (cut five very thin slivers of apple, and arrange in a fan shape, they should stick together in the fan and sit nicely on the ice)
