How To Make: Tropical Pasta Salad

You may not be able to embark on an exotic tropical vacation, but you could always treat your taste buds to a tropical experience with this pasta salad! Pineapple, sweetcorn, cheese, avocado, viennas and cooked pasta shells in a sweet, creamy dressing. This super tasty recipe is a meal in itself or the perfect side to take along to family get-togethers or BBQs.

And the best part? Well, this no-frills cold pasta salad is just SO easy to make and a guaranteed hit every single time it is served.

The secret to this tropical pasta salad lies in the dressing. The creamy mayonnaise-based dressing is sweetened with condensed milk and given a slight zing with some sweet chilli sauce and a squirt of lemon juice.

Once you’ve thrown together all the ingredients into a big bowl, chill the tropical pasta salad in the refrigerator for two to four hours.  If you have the time, letting the whole dish chill overnight is even better. Allowing it to sit overnight in the fridge gives the flavoursome dressing time to soak into the pasta. 

CHEF’S TIP

  • Why not get creative and replace the smoked viennas with chopped ham, grilled chicken or shrimp.

Ingredients

  • 500 grams cooked pasta shells
  • 1 sliced & cubed onion
  • 250 ml pineapple pieces
  • 250 ml whole kernel sweetcorn
  • 4 sliced smoked viennas
  • 150 ml mayonnaise
  • 15 ml condensed milk
  • 15 ml sweet chili sauce
  • 1 avocado peeled and cubed
  • 250 ml cubed cheddar cheese 
  • lemon juice
  • fresh black pepper
  • salt 

Instructions

  • Mix all the ingredients together
  • Garnish with the avocado and black pepper
