Neutral oil for frying
Set aside half of the sweetcorn. Add half of the corn, flour, eggs, baking powder, chilli, and coriander into the bowl of a food processor, plus a pinch of salt. Blend until nearly smooth, make sure to scrape the bottom of the bowl to catch any dry flour.
Transfer the mixture to a large bowl and fold through the remaining sweetcorn and the spring onion. Mix until well combined.
Pour two tablespoons of oil into a frying pan over medium-high heat. Spoon the batter into the pan, forming rounds by spreading the mixture out slightly with the back of your spoon. A ¼ cup measure is helpful for this.
Cook for about 2 minutes on each side or until golden brown. Transfer to a plate and keep warm while you cook the rest of the fritters.
Optionally serve with a fried egg, hot sauce, and some spring onions and coriander to garnish.
