1bird's eye chilliroughly diced (other chillies are fine, dependent on preference)

Instructions
Set aside half of the sweetcorn. Add half of the corn, flour, eggs, baking powder, chilli, and coriander into the bowl of a food processor, plus a pinch of salt. Blend until nearly smooth, make sure to scrape the bottom of the bowl to catch any dry flour.
Transfer the mixture to a large bowl and fold through the remaining sweetcorn and the spring onion. Mix until well combined.
Pour two tablespoons of oil into a frying pan over medium-high heat. Spoon the batter into the pan, forming rounds by spreading the mixture out slightly with the back of your spoon. A ΒΌ cup measure is helpful for this.
Cook for about 2 minutes on each side or until golden brown. Transfer to a plate and keep warm while you cook the rest of the fritters.
Optionally serve with a fried egg, hot sauce, and some spring onions and coriander to garnish.
